Koji Italian Sandwich ft. Prime Roots

I’m a huge fan of getting meat in the deli section and when I found out about Prime Roots I was intrigued to try something new for the new year.

What is Koji?

Koji-Meats employs the traditional epicurean methods found in regular deli meats, providing the familiar taste, texture, and appearance of the deli classics from my childhood. What sets it apart is its added benefits for both your well-being and the planet. These fresh at-best Koji meats are B-corp certified, gluten-free, soy-free, nitrate-free, and non-GMO.

Ingredients you will need:

This recipe is in three parts – the sauce, the greens, and the fillings. This sandwich is a little more work than your typical recipe, but I promise the results are so worth it! Things you need to add to your grocery basket are:

  • Prime Roots Koji-Meat (I used Turkey, Ham, Salami, and Pepperoni)
  • Red Onion
  • Garlic
  • Arugula
  • Lemon
  • Roma Tomatoes
  • Olive Oil (I prefer Graza’s Drizzle)
  • Red Wine Vinegar
  • Mayo
  • Sugar
  • Salt (Jacobsen’s Sea Salt is the best)
  • Pepper
  • Italian Seasoning
  • Chibata Roll
  • Sliced Cheese (I used Havarti)

How long does everything last?

This is a recipe that you want to work with somewhat quickly. If you are looking to make things ahead of time, I recommend making the sauce first (this lasts 7-10 days in the fridge), and preparing the salad the hour you are making the sandwiches (if left sitting for too long, it becomes a bit soggy and gross), and feel free to cut your veggies and bread ahead of time (be sure to place in a sealed bag in the fridge).

When should I make this recipe?

I honestly love this recipe at any time. It’s super fresh and a healthier alternative to traditional sandwiches – try it out and feel free to make substitutions where you deem necessary.

This plant-based koji-meat Italian sandwich is both tangy and spicy. Filled with an array of Prime Roots meats along with a homemade garlic aioli and mixed green salad.

Ingredients

  • Greens
  • ½ Red Onion, sliced thinly

  • 1 ½ Cups of Arugula

  • 1 ½ TBS Olive Oil

  • 1 tsp Salt

  • 1 tsp Pepper

  • 2 tsp Italian Seasoning

  • 1 TBS Red Wine Vinegar

  • 1 TBS Sugar

  • Garlic Aioli Spread
  • 4-5 Cloves Garlic, Minced

  • ½ Cup Mayo

  • ½ Lemon Zest

  • ½ Lemon Juice

  • 1 TBS Olive Oil

  • 1 tsp Salt

  • 1 tsp Pepper

  • Fillings
  • Prime Roots Smoked Koji-Turkey

  • Prime Roots Smoked Koji-Ham

  • Prime Roots Koji-Salami

  • Prime Roots Koji-Pepperoni

  • Chibata Roll, Cut in Half

  • 1-2 Roma Tomatoes, Sliced

  • 2 Slices of Cheese of Choice (I used Havarti)

Directions

  • Greens:
  • Mix sliced red onion, arugula, olive oil, salt, pepper, italian seasoning, redwine vinegar and sugar in a large bowl until coated, set aside.
  • Garlic Aioli:
  • Add minced garlic, mayo, lemon zest, lemon juice, olive oil, salt and pepper into a bowl. Mix to combine, set aside.
  • Assemble:
  • Toast your ciabatta until golden brown and spread garlic aioli on the inside of each half.
  • Top with cheese, Prime Roots Smoked Koji-Turkey, Prime Roots Smoked Koji-Ham, Prime Roots Koji-Salami, Prime Roots Koji-Pepperoni, tomato slices, cheese slices, and greens. Top with other half of the ciabatta, cut and serve.
